Shrimp and Cheese Ravioli

#51: Not being able to use my own blog for reference because I forgot links for things… #SCP

I think some things are easy to find so I don’t bother linking them. I’m a terrible person.

2 C. flour
3 eggs
1 t. salt
2 T. olive oil

1 package ricotta cheese
about 15 cooked cocktail shrimp, tails off
1 T. Herbs de Provence
salt and pepper
1/2 c parmesan


2 tablespoons finely chopped onion
2 cloves garlic, minced
2 tablespoons butter
1 tablespoon all-purpose flour
1/2 teaspoon salt
1/8 teaspoon black pepper
1/4 C whipping cream
1 1/4 C milk (2%)
1/2 C white cooking wine
1/2 cup shredded Parmesan
 5 snipped fresh basil leaves, in the style of chiffonade
1. Prepare dough…We used instructions and recipe from Tyler Florence again. I’m providing the link today so I don’t suck. We also used the dough hook on the mixer, since I don’t like getting messy as much as Justin, my sous chef.

2. Process the shrimp in a food processor until nearly pasty. Mix in with cheese and other seasonings.

3. Roll out ravioli dough to the last setting on your pasta machine.

4. Fill the mold and press them out!

6. We served with the white wine sauce we used on the other day with the Spinach Ravioli.


1. Cook onions and garlic in butter
2. Add in flour, salt and pepper
3. Add cream/milk and wine at the same time, heat up til bubbly.
4. Sprinkle in cheese until sauce thickens slightly and stir in basil.

7. Serve!
