daniel fast: day 1

Starting today, our church is participating in the Daniel Fast. While not really a fast, it takes out the indulgences and “pleasurable food” in life. We have decided to take on this challenge to grow deeper in our relationship with Jesus and listen and lean into His will.

Food is a huge part of our lives (clearly) and certain things have proved to be difficult to adjust to, even in our first day.

To see a list of acceptable foods, I’ve been using this as a guide. Basically, it’s being vegan with no sweeteners or leavening agents.

I won’t be doing so much editing this round, but I’ve joined a group on facebook for inspiration, both for recipes and prayer. I’m posting these for their benefit.

Lunch:

Overnight Oatmeal (adapted from here to be fast friendly)
1/3 C. old fashioned oatmeal
1/3 C. unsweetened coconut milk
1 t. chia seeds
Leave in the fridge overnight. These can be prepared for the whole week at one time, if you want.

Now, by itself, this tastes gross. The most bland thing I have ever eaten. In my entire life. It tastes completely like nothing.
Luckily I also had a cup of sliced strawberries to eat with each bite. It sweetened it up and made it edible.

Dinner:
Salsa
Quinoa with beans and corn
Homemade baked tortilla chips

1. Cut corn tortillas into triangles
2. Spray with cooking spray
3. Sprinkle on salt (kosher)
4. Squeeze on a bit of lime
5. Light dusting with chili powder and/or onion powder
6. Bake at 400 degrees until crispy!
